Best Unusual Dining ExperiencePine Creek CookhouseAs the moon slowly rises from the east, a gathering of 30 to 40 people gets a demonstration of how their cross-country ski bindings and headlamps work at the base area for the Ashcroft Ski Touring Center.The center maintains about 24 miles of cross-country trails for day use, but unlike most touring centers, it receives an influx of guests as the sun sets. Outside the ghost town of Ashcroft the activity reminds you of an era past. Now you are about to ski to dinner. It's common to hear languages from several different countries and feel a natural camaraderie among the group. A 1.5-mile trail leads gently uphill to the Pine Creek Cookhouse, a backcountry restaurant where soft candlelight, a roaring fire and a gourmet dining experience await. Once there, your ski guide transforms into your food server, taking orders from the full bar (remember, you've got to ski back down!) to start off your meal. Enjoy a good glass of wine before turning your attention to your feast of salmon, chicken or wild game cooked up in a creative Colorado style. For nonskiers, a horse-drawn sleigh also makes the leisurely trek to the cookhouse. This unique restaurant also serves lunch, but dinner remains the most special excursion.
